Throughout the process of aging, the spirit and fortified wines “breathes” within the oak barrel, expanding and sealing the oak barrel in the summer as well as contracting during the cold months. Its the colour as well as taste that are critical and are transferred to the spirit and fortified wines throughout this process in the oak barrel, but the summer time is the most crucial time, as it is at this time where majority of the aging takes place and the more flavour is taken from the oak.

 

Perperation Instructions:

 

  1. Fill with warm water (The barrel has been empty since manufacture and the oak could have dried)
  2. Keep refilling with water until the oak barrel has 'taken up' and stopped leaking. This can take up to two days, water will beed as it swells the wood and fills the pours
  3. When the barrel has taken up, empty water and let drain completely

 

Port Blending Preperations:

  1. Pour into a quarter of a bottle of Old Tawwny Port, roll it around several times and then empty it out
  2. Fill it with the port you hae selected or blended to be kept in the barrel
  3. If the barrel still leaks empty the fortified wine/port out, refill it with water and leave until it stops (in most instances this is unnecessary)
  4. Remember that patience is necessary at this stage, and is the key to successfully perparing the barrel
  5. Never immerse the barrel in water as this will turn it black and damage the barrel

 

Spirit Blending Preperations:

  1. Pour into a quarter of a bottle of Whiskey, roll it around several times and then empty it out
  2. Fill it with the spirit you have selected or blended to be kept in the barrel
  3. If the barrel still leaks empty the spirit out, refill it with water and leave until it stops (in most instances this is unnecessary)
  4. Remember that patience is necessary at this stage, and is the key to successfully perparing the barrel
  5. Never immerse the barrel in water as this will turn it black and damage the barrel

 

Port Blend Recipes:

 

Dry, Fairly Alchoholic Recipe Style

Three and a half bottles of Tawny Port

One bottle of Fino Sherry (Very Dry)

One bottle of Brandy (375ml)

 

Sweeter Less Alcoholic Recipe Style

Four bottles of Tawny Port

Half a bottle of Fino Sherry (very Dry)

One Bottle of Brandy (175ml)

 

We have customers that blend their ports with southern comfort.

 

Blends can be sized up or down depending on the tastes and the volume of the barrel, the barrel does not have to be full.

The blends will take time to "merry in" and provide a smooth drinking port or spirit. Some evaporation of the contents should be encouraged, as this hastens the "marrying in"

You should also try other blends such as specialised liquors, spirits and other suitable liquors
