Sourthern Haze was made along the same style as the world famous Southern Comfort Liquor that became known as "the grand old drink of the south". A secret mix of bourbon and fruit flavours that was developed in a bar near La Rue Bourbon in New Orleans by M.W. Heron back in 1874. Originally served only in M.W. Herons bar from a whiskey keg, the drink soon became popular and once bottling started in premises in Memphis the drink soon spread throughout the south.

In 1904 the drink won an award in St. Louis where the St. Louis Cocktail developed. Rather simple to make, simply add a twist of lemon to a glass of Southern Comfort. The drinks motto became, "Limit 2 drinks per customer. (No gentleman would ask for more). " By 1967 the drink had proved popular throughout the western world and was adopted by Janis Joplin the Rock Star as her favourite alcoholic drink. Southern Comfort is produced in varying strengths anywhere from 21 -50% alc/v and is often drunk neat over ice, with a mixer like Cola or in the case of the world famous Scarlet O'Hara, cranberry juice and a dash of lime.

Mixing Instructions; Make 30% alc/v Southern Haze by adding 280 ml of white granulated sugar to a jug and adding 2.1 litres of 32% alc/v filtered still spirit. Mix well and add the essence.
