The Marula tree "Sclerocarrya birrea", which produces small round yellow fruit is only found in one place on the planet, subequatorial Africa. The trees abound in the world famous Kruger wildlife park. Since time began, the elephants of Africa have feasted on this delicate but distinctive exotic fruit during harvest. The elephant herds travel vast distances to feast on the fruit often timing their

arrival at the very moment the berries are ready for eating. They can't reach the berries so they ram the trees to dislodge the fruit. As the fruit falls and lies on the ground it starts to ferment giving it a slightly sweet and alcoholic taste. The animals of the savannah will do almost anything for this fruit. The trees themselves cannot be cultivated so all the fruit used commercially needs to be gathered in the wild. The juice of the berry is extracted and distilled and combined in a cream base to create Amarula the unique taste of Africa. This African delicacy inspires the addition of Marula cream to the Top Shelf range.

 

This drink is most traditionally enjoyed as an after dinner drink served over ice. It also makes an ideal desert when poured over vanilla ice cream. As an alternative try a shot in black coffee. Try substituting Top Shelf Marula cream in an cocktail asking for Irish Cream.

 

Makes 1.125 litres. Use Still Spirits Cream Base with 500ml of 40% alc/v spirit. If Still Spirits Cream Base is unavailable then use 500ml Cream and 200ml sugar. This recipe will produce a liqueur of 17% alc/v.

 

Cocktails

 

African Cowboy

1 part Top Shelf Marula Cream

1 part Top Shelf Butterscotch Schnapps

Pour the Butterscotch Schnapps into a shot glass then carefully add the Marula over the back of a soon so that the cream layers on top

 

African Kiss

1 shot Top Shelf Marula Cream

1 shot Top Shelf Cafelua

Hot Coffee

Whipped Cream

Pour Marula Cream and Cafelua into Irish coffee glass, fill glass with hot coffee and top with whipped cream.

 

Golden Shot

1 part Top Shelf Scotch Heather

1 part Top Shelf Marula Cream

1 part Top Shelf Vodka

Pour all ingredients, as listed, into a shot glass over the back of a soon.

Pour Cafelua, then Marula Cream, then the Hazelnut not chilled and not layered -- SERVE!!!
