It is the ancient Totonaco Indians of Mexico who were the first keepers of the secrets of vanilla. When they were defeated by the Aztecs, they were demanded to relinquish their exotic fruit of the Tlilxochitl vine, vanilla pods. When, in tum, the Aztecs were defeated by the conquering Spaniard, Hernando Cortez, he returned to Spain with the precious plunder - vanilla beans - which were combined with cacao to make an unusual and pleasing drink. For eighty years, this special beverage was only enjoyed by the nobility and the very rich. Then, in 1602, Hugh Morgan, apothecary to Queen Elizabeth I, suggested that vanilla could be used as a flavoring all by itself, and the versatility of the exotic bean was finally uncovered. Vanilla is an orchid and belongs to the orchidaceous family. Of all the hundreds of varieties of orchids only two species are commercially grown to produce the vanilla (POD) or beans. They are V.Planifolia and V.Tahitensis. Today, Vanilla beans are grown in four main areas of the. world. Each region produces vanilla beans with distinctive characteristics and attributes. Madagascar is the largest producer of vanilla beans in the world and the ensuing vanilla is known as Madagascar Bourbon vanilla. The term Bourbon applies to beans grown on the Bourbon Islands - Madagascar, Cornaro, Seychelle and Reunion.

Caramel is formed from the caramelisation of sugar and with careful control of the process a very smooth sweet candy flavour can be produced. Caranilla liqueur has been developed for the home distilled industry and has no commercial equivalent at this time. It is a mellow blend of the two individual flavours which marry together to a rich and inviting liqueur. Try it on it's own on ice or as a desert topping for almost all types of desert. It is also eat in coffee and can be substituted in an recipe asking for Irish Cream.

 

Makes 1.125 litres. Use Still Spirits Cream Base with 500ml of 40% alc/v spirit. If Still Spirits Cream Base is unavailable then use 500ml Cream and 200m! sugar. This recipe will produce a liqueur of 17% alc/v.

Pour all ingredients, as listed, into a shot glass over the back of a soon to form distinct layers.

1 part Top Shelf Banana Cream

1 part Amaretto

1 part Caranilla Cream

Pour all ingredients, as listed, into a shot glass over the back of a soon.

 

Papamoa Spider

1 part Top Shelf Caranilla Cream

4 parts Cola.

Fill tall glass with ice. Add Caranilla cream and top up with cola. Beware of frothing.

 

Mex Shooter

1 part Melon Liqueur

1 part Top Shelf Vodka

1 part Top Shelf Caranilla Cream

Combine all ingredients in a cocktail shaker with the ice, shake, strain into a shot lass.
